RECIPES:  What are your favorite Blackberry Recipes?  Here's some of our Cowen Family Favorites!

 

 

 

 

BLACKBERRY ICE CREAM

 

4 cups fresh blackberries         Sugar (See Step 2)

1 cup water                             2 ½ Cup Whipping Cream

 

STEP 1:  PREPARE FRUIT (approx 50 minutes)

Combine 4 cups fresh BLACKBERRIES & 1 cup water in medium saucepan.  Slowly bring to boil.  Reduce heat and simmer gently until soft, about 10 minutes.

Pour into cheesecloth-lined strainer.  Let stand until juice has drained into bowl – about 30 minutes.   Squeeze pulp to extract all juice.

(OPTIONAL: Mix pulp with ½ tsp Vodka to prevent fruit from freezing; add pulp to ice cream in Step 4 after processing but before freezing.)

 

STEP 2:  PREPARE SYRUP (approx 10 minutes + Cooling Time)

Measure berry juice into heavy saucepan.  Add 1 CUP SUGAR for each cup JUICE.  Cook over low heat, swirling pan occasionally until sugar dissolves.  Increase heat and boil syrup 2 minutes.  Cool completely.

 

STEP 3:  PREPARE CREAM (approx 2 hours)

Mix 2 ½ Cups Syrup with 2 ½ Cups WHIPPING CREAM.  Refrigerate until well chilled.

 

STEP 4:  PROCESS ICE CREAM

Process Blackberry Cream Mixture in ice cream maker according to manufacturers instruction; ice cream will be soft.  Freeze in covered container several hours.

 

STEP 5:  ENJOY

 

RECIPE # 2 ....

KATIE'S BLACKBERRY PIE

4 Eggs Well Beaten
2 Bags of Blackberries (Juiced)
1/2 Stick Butter
 
Add 6 or 7 Tbsp Cornstarch & 1 1/2 Cup Sugar to Mixture above
 
Cook until thickened on stove top, then Pour into baked Pie Crusts
And Top with Cool Whip!

WILL'S BREAKFAST
1 Cup Greek Yogurt
2 Tablespoons Cowen Farm Blackberry Jam
1 Tablespoon Honey
Blend in blender to make fruit yogurt and enjoy!
